What is sourdough? How is it made?

Sourdough is a naturally occurring type of yeast that is used to leaven dough. Sourdough is a natural mixture of yeast and bacteria that helps the dough to rise. It is typically prepared by mixing flour and water and letting it sit for several days. During this process, bacteria and yeast in the environment enter the mixture, causing fermentation and resulting in sourdough.

Sourdough works slower than commercial yeast types, but it produces a more intense and flavorful dough. Breads made with sourdough are expected to last longer and be more delicious than regular yeast breads.

Sourdough is also a preferred method for healthy eating. Thanks to natural yeasts and bacteria, sourdough breads made with sourdough may contain probiotics and other nutritious compounds.

What are the benefits of Sourdough?

Sourdough is a natural type of yeast with many health benefits. Here are some of the health benefits of sourdough:

  • Digestive health: Sourdough contains probiotic bacteria that are beneficial to digestive health. These probiotics balance the gut flora and prevent the growth of bad bacteria that can cause digestive problems.
  • Lower glycemic index: Sourdough bread has a lower glycemic index than bread made with commercial yeast because the sourdough fermentation process slows down the rise of the dough. This helps to control blood sugar levels more steadily.
  • More nutrient content: Sourdough bread contains more nutrients than bread made with commercial yeast. The longer fermentation process of sourdough helps to break down the nutrients in the dough, making them easier to digest and absorb.
  • Gluten-free alternative: Sourdough bread can be a gluten-free alternative for people who are sensitive to gluten. The longer fermentation process of sourdough can help to break down gluten.
  • Longer freshness: Sourdough bread stays fresh longer than bread made with commercial yeast. This means that sourdough bread lasts longer and produces less waste.

For these reasons, sourdough is a preferred method for healthy eating.

How to Make Sourdough Starter?

Making sourdough starter is quite easy, but it is a process that takes a few days. Here are the steps to make sourdough starter:

Ingredients:

  • Whole wheat flour or rye flour
  • Water

Instructions:

  1. Wash a glass jar thoroughly with hot water and dry it.
  2. Add one cup of flour and one cup of water to the jar. Mix well and obtain a homogeneous mixture.
  3. Cover the jar with a cloth or cheesecloth and let it sit at room temperature for a few days. (At least 2-3 days, but it is recommended to wait for a week for better results.)
  4. Stir the mixture every day and open the jar for a few minutes to allow natural yeast and bacteria to have access to oxygen.
  5. The mixture in the jar should rise and have a sour smell. This is a sign that sourdough starter has formed. Once the sourdough starter has formed, you need to feed the mixture daily until it is ready to use.
  6. Before using the sourdough starter, stir the mixture in the jar and use the amount you need. Add one cup of water and one cup of flour to feed the remaining mixture. Repeat this process before each use.

The sourdough starter can continue to be fed as long as it is being used. When there is enough sourdough starter, you do not need to add one cup of water and one cup of flour each time to make sourdough starter. In this case, it is enough to stir the mixture in the jar before using the sourdough starter.

What are the Benefits of Sour Dough for Health?

Due to the digestive health benefits of sourdough, it is believed that it may be beneficial for some illnesses. However, it is not considered a definitive treatment method and it is recommended that you consult your doctor before using sourdough. Some of the potential benefits of sourdough that are believed to be beneficial for certain illnesses are:

  • Irritable Bowel Syndrome (IBS): Sourdough supports intestinal health by adding probiotic bacteria to the digestive system. Therefore, it is thought to help alleviate IBS symptoms.
  • Lactose intolerance: Sourdough breads may contain less lactose and therefore may be more easily digestible for people with lactose intolerance.
  • Candida infections: Sourdough can help prevent fungal infections such as Candida infections by regulating the balance of digestive system flora.
  • Celiac disease: Sourdough breads may contain less gluten than regular yeast breads and therefore may be more suitable for celiac patients.
  • Diabetes: Sourdough breads can help control blood sugar levels due to their lower glycemic index. Therefore, they may be a more suitable option for diabetes patients.

However, more research is needed on the use of sourdough as a medical treatment method. Before discussing the potential benefits of sourdough with your doctor, it is recommended that you discuss your own health status and medical history with them.
